This peppermint rind is a vacation staple.
It’s super easy to make and if you’re looking for an inexpensive but cute gift, you can wrap the bark and give it away as a gift.
Think about school teachers, Christmas parties. Everyone loves chocolate crust!
ingredients
- (2) 10 ounce sachets of premium dark chocolate chips
- (2) 10 ounce sachets of premium white chocolate chips
- 4 or 5 crushed peppermint candy canes
Directions
Take 4-5 candy canes and put them in a ziploc bag. Use a mallet or rolling pin to break the candy canes into small pieces … not dust … just tiny bite-sized pieces. Put aside. In a small microwaveable glass bowl, heat a 10-ounce bag of high-quality dark chocolate chips at 30-second intervals, stirring in between until completely melted. Once the first batch is completely melted, gradually pour the second sachet into the melted chocolate. The second bag of chips will melt from the heat of the chocolate that has already melted. This is called “tempering” and I promise this extra step will make your chocolate shiny and beautiful when you’re done.
Once the chocolate is completely melted, pour it into a baking sheet lined with waxed paper. Make sure your wax paper is sticking out of the pan so you can easily lift it out when everything is hard. Chill this first layer for 5 minutes.
In another small, microwaveable glass bowl, heat a 10-ounce bag of high-quality white chocolate chips at 30-second intervals and stir in between until completely melted.
Once the first batch is completely melted, gradually pour the second bag of white chocolate into the already melted chocolate. The second bag of chips will melt from the heat of the chocolate that has already melted. This is exactly the same as the dark chocolate.
Pour the white chocolate over the hardened dark chocolate and smooth it out with a spatula.
Sprinkle with pieces of candy and let set in the refrigerator for 20 minutes.
Use waxed paper to pull the chocolate out and break it into pieces.
