Happy friday! Sometimes when it comes to meals here, the ones that are easiest to throw together are the biggest hit. This chicken parmesan casserole fits in a lot of ways – a breeze I can put together with the ingredients I had on hand anyway, and it’s easy to double up and put in the freezer. This is the recipe from The Salty Marshmallow I used to cook the chicken breast for the casserole. I like to take fresh chicken breasts and make them for recipes for the coming days. PS – The Instant Pot Mac and Cheese from this site is a winner too!
