I am very excited to share a new series with you – – Clean up mom’s simple shortcuts. For the next six weeks, I’ll share my simple favorite shortcuts every Monday and collect yours on Instagram. I’ll be sharing them on Instagram as you share them, but I’ll be collecting them for the next six weeks as well and sharing them as a free printable version at the end of the series. I felt like I really need simple and easy now – you too? Can’t wait for us to collect all of the tips that will help us over the next six weeks. My favorite simple shortcuts for favorite simple meals? Let’s start with a list of favorite simple meals. I’ll list a few of myself, but I’ll also ask for your favorites and we’ll add links to print for free at the end of the series so you can easily find the recipe.
Winner, Winner Sheet Pan Dinner! Cooking in a sheet pan makes for an easy dinner with easy cleaning. I put the pan on top with foil and a piece of parchment paper to make cleaning even easier. Here are two great tin-pan dinners.

- Teriyaki Chicken + Veggies Sheet Pan Dinner from Mel’s Kitchen Cafe
- Shredded chicken in an instant pot – I take a jumbo pack of boneless and skinless chicken breasts or thighs from Costco and put the whole thing straight into the instant pot. Here is the method I use – when I get home – cook, mince (or chop), use something for dinner, and freeze the rest in 2-3 packages for another night. We use chicken schnitzel in salads, enchiladas, tacos, casseroles, sandwiches and wraps. This is one of our favorite chicken schnitzel recipes – Chicken Caesar Salad Wraps from Mel’s Kitchen Cafe. If you don’t want to cook the chicken, take a fried chicken or two and bypass the cooking.
